On a JK you're going to want to be sure and do something to protect the Evap cannister. It sits underneath the jeep and hangs down pretty far, and it's expensive to replace. There are 2 ways to deal with it, either relocate it or put a skid under it. Relocation kits are available, but I just happen ...

Granddaughter's stock 2007 JKU got 33" when we went to the Toyos. She has no clearance issues.

In my opinion - while a locker puts more stress on axle internals, open diffs are easier to break. This is because most axles break when the wheel starts spinning, the axle hops a little, then the spinning wheel suddenly gets traction. I've been running Toyo Open Country ATs for 7 years, I'm on my second set. I trust them so much I put a set on my grand-daughter's Jeep - and I'm a very protective grandfather... Nothing that's not Grampi approved goes on her Jeep.

Some people around here might say that you are nuts to buy such a capable Jeep and not use it. I bought my 2009 new off the lot and within 6 months had it lifted and on 32s, added skid plates and rocker protection specifically for trip to Moab in October of that year. Im not a fan of using RTV with a gasket . Id use it without one. I only use ultra black as its the most impervious to oils and lubes.
