I wouldn't worry about the initial amp draw.
Personally, I skip the probes and do a switch with a light. At any rate, you want to be able to shut the fan off for water crossings by interrupting the negative side.

TJs need a flat belly, IMO. I see no point in lowering something (skid plate) to add lift. SYE and drive shaft w/upper adj rear control arms first. Then 1" body lift. Then motor mounts or MM spacers. The flat belly. (A flat belly on 33s is better than a stock skid under a tJ on 35s.) Then a 4&q...
